For v4.x - You can find the copyright notice in:

/themes/flow/templates/partial/_footer.inc.php

That guidance was for v4.x, I've updated my response above to clarify. For v5.x of the script, you want to edit:

\themes\spirit\views\partial\layout.html.twig
